Meeting your significant others’ family is always a bit nerve-wracking. I mean, there are a lot of things that have the potential to go wrong and this is definitely a high-stakes situation…
If you’re anything like me, you’ll probably spend a good deal of time obsessing over what to wear, what to say, and how to style your hair. Then, you’ll come to the conclusion that you’re being silly because no one really cares what your hair looks like (hopefully), but they do care about what you bring to dinner. 😉
A little advice? A situation like this always calls for a side salad. Salad is usually a pretty neutral food that everyone can enjoy regardless of dietary needs and preferences. Plus, if you make this fun spiralized apple and kale salad, it gives you something interesting to talk about at dinner!

This recipe can be prepared in 10 minutes and is super simple – all you need is your trusty spiralizer.
You’ll start by “massaging” your kale (I know this sounds weird, but trust me on this) to break it down and make it sweeter. This is a great way to transform raw, tough kale into delicious leaves! (See my full tutorial here.)
Then top the kale with your spiralized apple. I used a combination of spiralized apple and cucumber to add sweetness to the salad without overloading it with fruit. Tip: If you’d prefer to make it sweeter, you can omit the cucumber and substitute a second apple.
Finally, finish it off with a simple dressing (olive oil, ACV, mustard, and apple juice) and top with sliced almonds, then you’re good to go!
- 1 large bunch kale, chopped
- ½ teaspoon sea salt
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon mustard
- 2 tablespoons apple juice
- 4 cups baby spinach
- 1 medium apple, spiralized
- 1 medium cucumber, spiralized
- ½ cup sliced almonds
- Add the kale to a medium mixing bowl along with the salt.
- "Massage" kale for five minutes, or until leaves are sweet and tender.
- In a small bowl, mix the olive oil, apple cider vinegar, mustard, and apple juice. Pour over the kale.
- Add the spinach, apple, and cucumber and mix well until everything is coated in dressing.
- Top with the sliced almonds and serve.
