You guys, it has been a crazy couple of weeks.
I moved a couple of weeks ago and thankfully, the actual move is now done, but I forget how much time it takes to settle into life in a new space. Especially if you happen to be a food blogger and are a tad picky about how the kitchen is organized… 😂
Some other recent highlights include figuring out my grad school schedule for fall, freaking out a bit over life transitions, and taking a much-needed long weekend to see Jack Johnson play at the Gorge Amphitheatre.
August is already getting booked up with lots of visits from out-of-town friends and family, so until then, this gal is going to kick back, take a breather and have a drink…
Specifically, I’ll be enjoying this (non-alcoholic) cucumber mojito because, well, it’s pretty amazing and I am seriously craving green things after a long weekend stuck in the car. 😉
This cucumber lime mojito starts with fresh cucumber and lime juice, mint leaves, stevia for sweetness (this is the one I use), and then sparkling water or a little club soda.
The end result is a bubbly, delicious concoction that will leave your taste buds satisfied! It’s delicious as is, and although I haven’t tried an alcoholic variation of this recipe, I have a hunch it’d be pretty amazing if you did need to add a little rum… 😉
Note: The recipe below requires a juicer to juice the cucumber, lime, and mint. However, if you don’t have a juicer, you can juice the lime using a citrus juicer or by hand, then muddle the cucumber and mint. The drink will be a chunkier texture, but it will have a similar flavor.
- 1 large cucumber
- 2 limes, divided
- 16 mint sprigs, divided
- 32 ounces sparkling water or club soda
- Stevia, to taste
- Juice the cucumber, 1 lime, and about 12 mint sprigs. Divide the cucumber juice between four glasses. Add ice and top with sparkling water. Add stevia to taste. Cut lime into 4 slices and garnish each glass, along with the remaining mint.
- Serve immediately.
