I’ve learned that I am a very indecisive person when it comes to buying produce.  It usually takes me three rounds in the produce section or at the farmers market before I feel ready to make some commitments.  And apparently, my indecisiveness is even worse when I’m buying produce online.

Onto the juice! This Mojito Juice is one of my absolute favorite green drinks. I love the combination of cucumber, mint, and lemon in the juice because it makes me feel like I’m sipping a fancy cocktail, which also happens to be fabulous for my health! If you want a sweeter version of this juice, simply sub out the celery for an apple of your choosing.

  • 1 cucumber
  • 3 stalks celery
  • handful fresh mint
  • 2 kale leaves
  • 1 lemon, peeled
  1. Juice ingredients and enjoy!

      This recipe was intended for a juicer, but I have seen many people online say that you can make juice in a blender. The general method is the blend the ingredient with water and then strain out the pulp. I have never tried this so I can’t personally recommend it or tell you how it compares, but it might be an option if you don’t have a juicer.

        Why strain out the pulp? When i ‘juiced’ I popped the ‘pulp’ into a pot of beans or soup. Or even froze it.
        But why not just consume the ‘whole food’?
        If nothing else, at least valuable fiber.
        However , uncertain whether a regular blender would pulverize enough.
        What do you think?

      I no longer use a juicer, but instead use a strong blender, wastes nothing.
      I have found the ‘Bullet’ to be a less expensive alternative to a Vita Mix.
      For larger quantities just purchased a Blendex at Costco on sale for about 239$.
      Will see how that works.

      You can definitely juice it with the peel on, but I’ve found this makes it much stronger and bitter so I’d probably only use half a lemon. Let me know what you think!
