One of my favorite afternoon snacks is simply a spoonful of almond butter. This originally started because I was too lazy to make a more complicated afternoon snack, but it was so delicious and simple that the habit stuck. And now it’s become a mandatory part of my afternoon.
Me with almond butter and a spoon? Ooh, we’re a dangerous bunch. And when you throw dates and coconut into the mix? Expect things to get a little crazy.
This is so simple to make and I love it because it’s hearty enough to be an afternoon snack while also curing my sweet tooth.

- 2 dates, pitted
- 1 tablespoon almond butter
- 2 teaspoons shredded (unsweetened) coconut flakes
- Cut dates open lengthwise and stuff with almond butter. Sprinkle coconut over the top and enjoy!
