We’ve finally arrived at the end of the summer and if you follow a mostly seasonal diet like I do, you’ve probably been eating your fair share of zucchini this season. Zucchini is a wonderful and versatile vegetable full of fiber, folate, magnesium, and vitamins A and C. Regardless of how healthy and delicious zucchini is, if you’ve been eating too much of it this summer you might be bored of it by now and ready to move onto the new fall crops… but don’t give up just yet!
Here are my six favorite creative and healthy ways to enjoy zucchini that will excite your tastebuds and nourish your body.
1. Spiralize zucchini!
Did you know that you can transform zucchini from a squash into amazing “pasta” that looks just like spaghetti? (If you’ve been reading this blog all summer, I’m sure you’re quite aware of this by now!)
Zucchini pasta is full of fiber and extra nutrients that you won’t find in white pasta and it’s also a great way to reduce your carbohydrate intake while still indulging in a delicious meal that feels like comfort food. And, if you have any “picky eaters” at home (adults included!), this is a great way to get them to eat their veggies!

2. Put zucchini in tacos!
Let’s be real here… doesn’t everything taste better as a taco? 3. Make zucchini sushi!

4. Make zucchini lasagna!

5. Blend zucchini in soup!
Maybe at this point in the season you just need to eat zucchini without thinking about the fact that you’re eating zucchini. I totally get it. 6. Transform zucchini into pizza!

Since zucchini is used as the pizza base, these are a perfect gluten-free option for family dinners. For a quick weeknight meal, lay out bowls of toppings and then allow family members to each assemble their own pizza before baking!
